WHO WE ARE
Acid & Salt began as an applied principal to cooking. For me, as a a chef, the nuances of a dish have always lived here.
Acid provides the palette awakener; it cuts through the fat and makes it bright and happy.
Salt brings out the depth of flavor. ask yourself, what is a tomato without salt?
Later on in my life, Acid & Salt became a philosophy; cutting through the fat, a metaphor for so much else, the depth of flavor; an eternal search.
Now Acid & Salt is a business built on the principals and philosophies that have guided me, catapulted me even and continue to shape me.

MEET THE TEAM
David Codney is the Creative Architect and CEO of Acid & Salt inc. Prior to the launch of the company, he was the Executive Chef of The Peninsula BeverlyHills. During his tenure at the renowned hotel, Chef Codney has designed and rebuilt two of The
Hotel’s kitchens, launched countless menus for The Hotel’s awarded restaurants , created the
celebrated summer BBQ series and is the sole designer and caretaker of The Hotel’s beloved roof
top garden which provides countless herbs and vegetables for the culinary program.
Prior to working at The Peninsula Beverly Hills, Chef Codney worked in various establishments
throughout the country, including numerous Ritz Carlton properties , The Mansion on Turtle
Creek in Dallas, the Broadmoor Hotel in Colorado Springs, and The Baricelli Inn (which at the
time was top 50 restaurant in United States). Chef Codney’s professional highlights include
cooking at The James Beard House twice, awards from Forbes Five Star, AAA Five Diamond ,
Condé Nast, Travel and Leisure, as well as Wine Spectator. Chef Codney’s larger than life
personality has landed him spots on TV shows and media publications including MasterChef,
Hallmark Home And Family, Food Network, VOGUE, and The New York Times.
While he feels most at home in the kitchen, guests are often likely to see him in the front
of house doing his version of storytelling; explaining the origins and history of ingredients
and how they came together . His philosophy on food is rather simple in its approach but
complex in nature. He believes no one should have to think about what they’re eating. Chef
Codney says, “Food has the ability to transport one back to a specific time and memory just by
holding ingredient sacred and highlighting certain aspects.” His food is whimsical but serious,
approachable but deceptively complex, childish but cloaked in a tuxedo, and just like him,
completely unapologetic.
When he’s not cooking , you can find Chef Codney searching for the perfect taco, trying to grow
a select variety of hops, or spending time with his twin teens. While he has cooked for
many dignitaries, they remain his toughest critics and cutest fans.
